fixed, better, better than better!



I have not posted anything for a while, and there is a reason for that unfortunately. I have had a broken pointer finger, on my right hand, and I am right handed. So, I have had some forced time off due to a wood chopping accident. It sounds bad. It was. Thankfully I am on the mend, and back to work! Index finger intact, back to mixing batter, and squeezing frosting just as it should be.


Fun things we found while we were on the mend. 1)Chinese red food dye
for our red velvet cupcakes. The intensity and richness of the color is unreal. Loves it. 2)Cupcake stencils! They are so pretty. I will post some pics as soon as I can. 3) Christina Z. for our logo! We will be working with her in the near future, so excited!!!
I am still on the look out for the perfect cupcake liner, that is the perfect price. There are many good ones, but they are really expensive, or a hassle to get. Here's to bargain shopping!
New ideas brewed, Pistachio, pear, and whiskey cupcakes, Creme brule cupcakes, Chocolate, toffee, and bacon cupcakes, Fig, goat cheese, honey, and walnut cupcakes. Also I am thinking about adding to the Bad Cupcake brand, sweets treats and cool confections. Something like brownies, rice crispy treats, cookies, and bar cookies but with my cupcake flavor twist. We will go from there:)

People are neat


I am posting about the most awesome Andrew Jive productions. While not completely cupcake related, he eats cupcakes, and is generally cool, so it counts. Also check out his bodacious blog, he posted a nice what-not about us! Check out his awesome creativity in action, and check out some of his partners in crime. This is a group to watch. Cool kids roster on his page for starters; Eric Snyder, Christy Lee Zilka, Damien Coffey, more added as it grows. Their perspective puts a smile on my face.

Parts of a whole

First part, I took these pictures, so they are not as pretty as they should be. We miss our talented photographer.

Next is the butterfly wings. I will pull these off the wax paper and place them in the soft and gooey ganache. I melted white chocolate that was already sweetened, and added 100% cacao chocolate pieces, and melted and mix them together on a double boiler. I had to work fast! It is the hurry up and wait for the chocolate to cool, then it is get it in the piping bag before it hardens time:) I fancied the butterflies up with nonpareils, to make it more 3 dimensional.

Then the Chocolate divine cupcake. We mix it, and bake it. Simple No?

Third part. Ganache. More double boiler. Fine chocolate, 70% cacao, heavy whipping cream, and baking sugar. I love this process. It is my favorite step, making a pool of chocolate goo. If only I could take a dip in it, but that job belongs to the cupcakes.

Which brings us to part four. Dip the cupcake in said cacao goo. This is repeated as many time as desired.
Final part. Pretty part. Bestest part ever! Garnish!!!!! Time to unleash the butterfly. Top those chocolate beauties with the butterfly, and enjoy your hard work.
Not too bad for a Bad Cupcake?

~Extraordinaire Carottes~

Carrot and coconut cupcake. Simple warm fuzzies. Fresh grated nutmeg and crushed cardamom, orange zest, natural organic coconut flakes, organic carrots, fair trade crushed pineapple and it makes me happy! Topped off with a not too sweet cream cheese frosting, more pineapple with a bit of carrot added. Tastes like fall is here, and I am loving it!

Feminist press

Auction time.

Yet another great cause to be a part of. CALYX, A Journal of Art and Literature by Women was begun in Corvallis in 1976, more than 100 years after feminist Abigail Scott Duniway began her Portland "human rights" weekly, the New Northwest. CALYX was the first West Coast literary journal with women editors publishing women's works.

We will be donating some delish cupcakes to these fine ladies this weekend. Caramel apple cupcakes, Guinness stout cupcakes and undecided cupcakes. Contenders are chocolate bacon cupcake and carrot coconut cupcake. But that could all change on a moments whim :)

Update: All went grand! Thanks Becks for hooking us up. You, as always, rock. We went with a version of strawberry-wawa, as well as the stout cupcake, and caramel apple cupcake. They were fun and rewarding to do. CALYX is a great organization for women in literature. The ladies there were delightful, and Cynthia, the event coordinator, was warm and welcoming. Good times, good vibes. It is, as always, good to give. Here is our CALYX shout out. Whoot!

Wow-sah!

Savory Saffron
I am working on a new cupcake. No name yet. Forest suggested Effing-good, but that is inappropriate.... Maybe saffron surprise, everything but the kitchen sink, Spanish saffron.... who knows. Suggestions??? Dreamy chocolate cupcake, peppercorns, cinnamon, fresh nutmeg, and a hint of coffee and vanilla, saffron spiced custard filling, spiced vanilla butter cream frosting, and finally strawberry puree on top. Words, are nothing. Just amazing. Thank you cupcake, I love you.

I bleed frosting


Well not really.


I am very excited to not announce, and sit on exciting news, that I really want to share! There I said it, I am not telling. But it will come, and I can't wait to share. A big honor. Good things are meant to blossom, and not be plucked to early, or something. Hint- community, not just ours, delicious, sometimes nutritious, and always fantaboulous. So much preparation, and deliberation is coming. Good stuff.


Other news: We have been working in the art in the community as of late. I am thankful for Babs, Paige, and Berni (foxy fun ladies) for looking me up and giving me an opportunity to help give back.

Truly, it has been so cleansing for the soul, inspiring. What an amazing community we live in. Pegasus Art Gallery, Corvallis Art Center, ARTrageous are fantastic companies, with beautiful people at the helm. Such giving, selfless, inspired beings are all around us. We need only look.


We are rolling in the cupcakes, and it is a peaceful kinda thing. If only all life's solutions came in a cupcake liner.

Art Gallery time! Bad cupcakes on the tips of every ones tongues. Scented cupcakes. Molasses, Guinness, orange zest, and warm fall spices, make this a true fall pleasure. Soft and moist, like ginger bread, topped with spiced whipped cream and orange zest. Hello Holidays!
Love Lavender

Local honey, organic fresh-picked lavender, crispy top and soft center make this sweet cake subtle and lite. Butter cream & honey frosting to top it off, with lavender buds to add a complex and lovely contrast of textures. Even better.

Epic Cupcakes

So We are beat! We just finished a bunch of small orders wrapped around the grand opening of
Epic Day Spa. Epic's opening was exactly that, EPIC!

They know how to throw a party. Good job girls. Your hostess abilities are amazing. The ladies were beaming and beautiful. The guests were happy and spoiled, and they cleaned out our 300+ cupcakes in less than 40 minutes. That just scratches the surface of what happened and was there for the guests. What a great opening, truly amazing.

Below are some of the cupcakes we did this week.

Strawberry wa-wa
Moist, creamy, vanilla bean cupcake, with gads of strawberries mixed in, and strawberry whipped cream on top.
Cha-Cha Chili
Chocolate divine cupcake with Thai chilies mixed in, dipped in chocolate ganache, with milk chocolate butter cream frosting, and Thai chili on top. Cool on top, spicy on the bottom.

Coconut and lime
Coconut cupcake with fresh lime zest and juice through out, filled with a creamy lime filling, coconut meringue frosting, and coconut on top. Refreshing lime, cool coconut, dreamy flavor.

TurtleRich chocolate cupcake, double dipped in the finest chocolate ganache, toasted pecan, and homemade caramel drizzled on top. Gooey, sticky, GOOD!
Chaco-chaco
Our chocolate divine cupcake with cocoa frosting. Simple, perfect, divine.

The Yvonne
This vanilla cupcake is smothered in white chocolate butter cream and raspberry sauce, filled with raspberry preserves and topped off with a raspberry. Light, fluffy, a bit messy, and delish, enjoy!

Short list of flavor combinations

  1. Coconut and lime- Coconut cupcake with lime zest and lime curd filling, with a coconut butter cream and lime zest frosting.
  2. Carmel and sea salt- Buttermilk rich cupcake with a caramel frosting and a touch of sea salt, and sea salt and turbinado sugar mix garnish.
  3. Strawberry wa-wa- Vanilla bean cupcake, with fresh strawberries mixed in, strawberry whipped cream topping and a strawberry on top.
  4. Chocolate covered roses- Chocolate divine cupcake with a twist of rose scented romance, a heady rose water gauche with a sugared rose petal on top.
  5. Strawbasil- Buttermilk rich cupcake, fresh basil and strawberries mixed in with butter cream frosting and sugared basil on top.
  6. Turtles- Our chocolate divine cupcake, with our chocolate gauche, topped with toasted pecans, and a drizzled with caramel.
  7. Maple bacon- Brown butter cupcake, with maple bacon mixed in, with a salty maple frosting and turbinado sugar garnish.
  8. Lavender tea time- Honey buttermilk rich cupcake with blue lavender, and a honey lavender glaze with white lavender garnish.
  9. Shirley Temple- moist white cake with a twist, ginger ale added for a lighter more airy cake, grenadine and cherry surprise, with a glossy whipped marshmallow topping and and maraschino cherry on top.
  10. Chocolate zinger- Chocolate divine cupcake with orange zest and juice, topped off with whipped cream, orange zest and chocolate shavings.
  11. Stout cupcake- Ginger spiced cupcake with rich Guinness stout and a spiced whipped cream frosting.
  12. The Yvonne- Vanilla bean cupcake, with raspberry-raspberry filling, white chocolate butter cream frosting and topped with a raspberry.
  13. Pineapple upside down cupcake- Rich, creamy, dreamy yellow cake, with brown sugar and pineapple juice and slices mix together for a perfect moist and delish topping, and a cherry in the middle for the perfect comfort classic. (optional candied nuts and or whipped topping.)
  14. Fluffernutter- Butter milk rich cupcake, with marshmallow filling, and a peanut butter marshmallow topping with graham cracker sprinkles.
  15. Cha-cha Chili- Chocolate divine cupcake with Thai chili to spice up the heat, with a rich chocolate butter cream frosting and a pinch more chili, and red hots on top.

Shipping times we live in!

We are working on a new package to ship to all you lovey's out there. Yes We Do Ship Cupcakes!!! We are going to have a short order of flavors, and frosting to start. Cupcakes are made to order of course. Ships in two days. Price will be around $36 for the package, that includes shipping cost. Package will include your choice of cupcake mix and frosting, sprinkles, cupcake liners, pan, and of course instructions, and fun tips.
We also are planning on delivering this fun package in the Corvallis area.

Q & A

I have a lot of questions asking me what I will, and wont do, and have to offer. So I thought I would give a quick q&a.

Yes
I do cakes.
I do tiers. Up to 3 currently.

No.
I don not do fondant, yet. I have yet to be persuaded of the glories of fondant. What can I say? I am a purist. My cakes, fillings and frosting are delish, and fondant is not.

Some things we offer:
My selection of vendors is large and growing. We want to be able to offer you what you want, down to the smallest details.











We have a huge selection of liners and cupcake wrappers. We love hand made touches and look forward to helping you add whatever inspires you. If you can dream it, we will do our best to make it happen.














Some updated pricing:
Cake per slice is $4
Per cupcake $2, with filling $3.
Set up fee of $20 in the Corvallis and surrounding area, other distances to be discussed.

Each tier needs about 3-4" between each tier, as it is assembled. I.E. a 4" cake on a 7" cake. Not a 10" cake on a 11" cake.

We require a cupcake order minimum of two dozen.

We require a 30% deposit to reserve a large order date. Final payment prior to completion (to be discussed, 10% non refundable cancellation cost).

Good week for cake



This was our fave gig this week. Aside from working with Jen and Rhio.
We had a crazy week. A really long week. A week with late nights and early mornings, and not much to eat aside from cupcakes:) A week with some minor injuries and a minor fire....Don't tell Forest.
We loved the colors for the wedding.
They were so happy and fun!
All shades of Magenta, Marigold, and Apple Green, Wowsah! The setting was serene and exciting. You could see and feel the love of the couple for each other, and the families feelings for them.
It was truly beautiful.
The cupcake tree turned out fantastic too.
Hopefully we can get some better pics up.

I was swamped this week, and she came in like a BOSS.
I love the detail that she put into this cake.
Super cute.

The cupcakes were lemon and blueberry, pink velvet, My magic chocolate, and vanilla bean. They all had vanilla butter cream frosting, and were yum! We put fresh flowers on top, violas and nasturtiums. Thanks to Sonja for the extra flowers! They were delicious. The cake was very traditional, and splendid, vanilla bean with raspberry filling and vanilla butter cream frosting.







We are having some cupcake trees made for future use.

I Heart Cupcake





We had a party remnant, from a prior gig left over. So here it is.
The cupcake in question is the lovely almond-white chocolate cupcake, with whipped cream cheese-almond and raspberry frosting. We had some raspberry gourmet sprinkles waiting to be broken in, so we added a bit of trim on the cupcake as well.



This cupcake is truly decadent. The cake is soft and moist, with bits of bite in the white chocolate chips. The frosting is lite and slightly sweet, and rich from the almond and a tang from the raspberries. This is a true romancer. One of these, and my guy remembered why he appreciates me in the kitchen:) So good, I got three kickin' London Fly's out of the deal. Here's to you "I heart cupcake". I thank you!

Over due post!






I have been swamped! I have been shipping cupcakes cross country, and baking for locals like a mad woman. My camera man has gone cross country:( However he did one last photo shoot for me and these cupcakes are lovely! "Much Ado About Nothing"- Banana cupcakes, with a juicy mango butter cream frosting.
This may be my most favorite frosting ever! I got this inspiration from my time working at a Vietnamese restaurant. There is a little curry and spice in these bad boys, WOW! YUM. More Asian influence cupcakes to follow. Green tea and yin yang frosting? I think so.
This is going to be a tasty summer.

Caution: Death by Chocolate!




Today we made death by chocolate with a twist. Behold! the bitter sweet-chocolate chip, brownie cupcake. To make it extra special, we made a chocolate-ricotta and butter cream frosting with some more tasty bitter sweet chocolate chips. Ta~da! or should I say BAD?Chocolate mess will ensue with these beauties, ravenous child not included. Enjoy, we did.

Back for good!


Thanks to the wondrous Meghann Street-Buswell My Bad Cupcake self is back in action. Everything will be back and up to date shortly. Food for thought; Chocolate-chocolate chip cupcakes with sea salt and caramel frosting. Mmmmm salty!
